Ingredients
- 2 large tortillas
- 2 tablespoons of cottage cheese
- 2 tablespoons of hummus
- 1 tablespoon of basil pesto
- Handful of baby spinach
- Handful of tomatoes
- 2 ham slices (optional)
- Handful of mozzarella (optional)
Equipment
- Toaster
- Knife
- Chopping board
- Lots of spoons!
Instructions
- Prepare your fillings by cutting the tomatoes and if you have mozzarella then cut it into thin slices as well.
- Lay out your tortillas on a clean surface.
- Spread a layer of cottage cheese evenly over the middle part of each tortilla. Follow with a layer of hummus, and a dollop of basil pesto, spreading both out.
- Place a handful of baby spinach leaves on top of the spreads. Arrange your tomato slices, ham, and mozzarella over the spinach.
- Fold the sides of the tortillas towards the middle to form a burrito shape.
- Carefully place each folded tortilla into the toaster, ensuring they don’t overlap.
- Toast the tortillas until they are crispy and golden brown. This can take two to three cycles depending on your toaster settings.
- Once toasted, carefully remove the tortillas. Cut into wedges or serve whole.
