Ingredients
For the pie crust:
- 200g flour (100g wholemeal / 100g buckwheat)
- 100g water
- 25g Finca Duernas olive oil
- Salt
For the pie crust:
- 4 eggs
- 200ml cream
- Pepper, salt
- 300g of cauliflower (steamed)
- 100g chorizo
- 70g grated cheese

Instructions
- Preheat the oven to 200°C.
- Prepare the pie crust by mixing together the flour, water, olive oil and salt in a bowl.
- Once fully mixed, transfer it to a floured work surface, roll it out, and then add it to your baking dish.
- Steam the cauliflower for 5 minutes.
- Add the steamed cauliflower, chopped chorizo and grated cheese to the baking dish on top of the crust.
- Whip the eggs with the cream in a separate bowl. Add salt and pepper.
- Pour the eggs and cream mixture over the rest of the ingredients in the pastry dish and place the quiche in the preheated oven for 30 to 40 minutes.
